Ready In: 30 Minutes  Yields: 4 servings

"A favourite in our household. An ideal starter with a meat, fish or pasta-based main dish. Note that the caesar dressing can be prepared a day ahead."

INGREDIENTS:
  
2 (140g) bacon rashers, finely chopped

1 medium cos lettuce, torn
1 egg
2 cloves garlic, quartered
2 tablespoons lemon juice
1 teaspoon dijon mustard
8 anchovy fillets, drained
3/4 cup (180ml) olive oil
1/2 cup croutons
1/2 cup (40g) shaved parmesan cheese
1/2 teaspoon freshly ground black pepper

DIRECTIONS:

1. Cook pasta in boiling water until tender. Drain, rinse under cold water and drain again.

2. Meanwhile fry bacon rashers in frying pan until browned and crisp. Drain on absorbent paper.

  
3. Blend egg, garlic, lemon juice, mustard, anchovy fillets and gradually add olive oil. Blend until caesar dressing thickens.

4. Place pasta, croutons and bacon in large bowl, add half the caesar dressing and toss gently to combine. 

5. Divide salad among serving plates, drizzle with remaining dressing, sprinkle cheese and add a pinch of black pepper.

    I have taken to cooking "big time" since the middle of 2007, having dabbled in food preparation for at least 15 years previously.  
       
    The recipes in this site have originated from various sources and have all been modified by me. The main sources are; my wife's collection of recipes, those received from numerous friends and family and others from various recipe books and the internet. A few are my original creations.
