Ready In: 35 Minutes  Yields: 8 servings

"Fruit Pizza is a treat that will please your family for years to come."



INGREDIENTS: 

¾ cup butter or margarine
180 grams Marie biscuits
¼ cup sugar
1 tablespoon cornstarch
¾ cup fresh fruit juice (orange, pineapple, Mango etc.)
8 oz cream cheese
¼ cup sugar
2 tablespoons cream
½ teaspoon grated lemon rind
½ teaspoon vanilla
5 strawberries, cut in half
2 peaches sliced
10 grapes, cut in half
1 mango sliced
(any combination of fruits can be used)

DIRECTIONS:

1. Blend the biscuits until it becomes almost powdery. Add butter and keep blending until properly mixed. Press the mixture onto a 12 inch round pizza pan and keep aside.

2. Prepare glaze by combining sugar and cornstarch. Mix well in 1 quart saucepan, add juice and cook over medium heat. Bring to a boil and let cook for 2 minutes, stirring constantly. Cool for 10 minutes.

3. Make cheese topping by mixing cream cheese, sugar, cream, lemon rind and vanilla. Use electric mixer and mix until smooth. Spoon cheese topping over pie crust in pizza pan, arrange the fruits on top and drizzle glaze over fruit. Keep in fridge until served. Cut into wedges to serve.

    I have taken to cooking "big time" since the middle of 2007, having dabbled in food preparation for at least 15 years previously.
